4 each ripe plantains skin should be turning black
oil as needed to fry

Directions:

Peel plantains and slice 1/4 inch thick.
Heat oil in pan and fry until golden brown. Remove from oil and drain on paper towels. Season to
taste with salt.
Alternate method: Toss plantain slices in oil and roast in hot oven until golden brown
