4 ounces bacon optional, omit for vegetarian version
2 each onions diced small
2 each green bell pepper diced small
3 cloves garlic minced fine
2 cups cooked black beans
4 cups rice converted (parboiled)
1 ½ quarts chicken broth up to 2 quarts, use vegetable broth
for vegetarian option
2 each bay leaves, whole
1 teaspoon black pepper or to taste
to taste salt

Directions:
Directions:
Cut bacon into strips and saute to render fat. If not using bacon, heat 2 ounces oil.
Saute onions, peppers and garlic in bacon fat (or oil) until soft. Add beans, rice bay leaves, rice,
broth and black pepper. Bring to boil, reduce to simmer, cover and cook until rice is done (15 - 18
minutes) Adjust seasoning and discard bay leaves.
