for the marinade (adobo)
3 cups fresh cilantro chopped
6 each bay leaf or 1 tablespoon ground bay leaf
1 tablespoon ground cumin
1 tablespoon dried oregano crumbled
1 tablespoon dried thyme crumbled
1 tablespoon black pepper
2 tablespoons salt
1 each onion minced fine
½ cup minced garlic
2 cups white vinegar
1 cup vegetable oil
for the steak
10 pounds skirt steak see note

Directions:
Directions:
Blend adobo ingredients together.
Marinate steaks in adobo for about 4 hours, drain and discard marinade.
Grill steaks to desired doneness when needed, slice and serve immediately.
Serving Ideas: Serve with Chimichurri sauce (see recipe)
Note: You can substitute flank steak for skirt steak if desired
