12 5-oz chicken breasts no skin, no bone
for the marinade
½ cup fresh cilantro chopped
1 teaspoon ground cumin
2 teaspoons dried oregano
2 teaspoons dried thyme
2 teaspoons black pepper
1 ½ tablespoons minced garlic
½ cup vinegar
½ cup lime juice
½ cup oil
½ teaspoon chili powder
to taste salt and pepper
For the filling
6 cups cooked rice hot
1 tablespoon curry powder
6 cups cooked black beans
12 each wrap plain
12 ounces salsa
½ cup fresh cilantro chopped

Directions:

Combine marinade ingredients, pour over chicken, cover and refrigerate about 2 hours. Drain and
discard marinade, season chicken with salt and pepper, grill or roast until done (165 degrees
internal temperature for 15 seconds). Cut chicken into strips and reserve until needed.
Combine curry powder with rice, mix to coat rice. Heat black beans to 165 degrees.
To assemble burrito: Warm wrap slightly, place 4 ounces of chicken strips, 1/2 cup of rice, 1/2 cup
of beans, 1 ounce of salsa and a sprinkle of cilantro. Roll-up burrito style.
Serving Ideas: Serve with yucca fries on the side.
