Ingredients:  
1 pound lentil
1 fluid ounce olive oil
1 each red onion diced
1 each red bell pepper diced 1/4-inch
1 tablespoon minced garlic
3 tablespoons fresh cilantro chopped
3 each banana peeled and chopped
cup balsamic vinegar
to taste salt and pepper

Directions:
Directions:
Cook lentils in water until barely done, drain and cool.
Saute onion, pepper & garlic in oil until tender, cool and add to lentils.
Combine lentil / onion mixture, add bananas and cilantro, combine gently and season to taste with
salt, pepper and vinegar.
