1 c. creamy peanut butter
1/2 c. chunky peanut butter (or use what you have)
3/4 c. packed brown sugar
1/4 c. granulated white sugar
1/3 c. honey
1/2 c. softened butter
3 eggs
1 T. vanilla extract
3 1/2 c. quick cooking oats
1 c. rolled oats, lightly processed in blender
2 tsp. baking soda
1 1/2 c. mini semi-sweet chocolate chips
1 1/4 c. chopped walnuts
1/2 c. sweetened dried cranberries
1/2 c. raisins

Preheat oven to 350º F. (I use convection) Prepare cookie sheets with parchment or silpat mats. In a large bowl combine the peanut butters, butter, sugars and honey.Use an electric mixer until well combined. Mix in eggs and vanilla. Mix in oats and baking soda. Stir in chocolate chips, walnuts , cranberries and raisins.( add any mix ins you would like at this point.) Form molded 1/4 cup (2"diameter X 1/2" high) cookies on prepared cookie sheets 8 at a time. Bake 10-12 minutes.DO NOT OVER BAKE. Lightly brown around the edges. Cool 5 minutes on cookie sheet to set, before transferring to cooling rack. Cool completely before storing in airtight container!
