1 tablespoon butter
½ green or red pepper, chopped
¼ cup (approximately) onion, chopped
4-5 slices of ham, chopped
1 slice cheese or ¼ cup shredded cheese
1 small tomato, chopped
2 eggs
Pepper, old bay, dill, or whatever spices you want in eggs
2 slices bread

(NOTE: amounts of vegetables and ham above are approximate – use how much you want, or have, or substitute other ingredients)

Place 1 tablespoon of butter into skillet. Chop pepper, onion, ham and tomato into small chunks.
Heat skillet to medium-high, melting butter. Add ham, green pepper and onion, stirring occasionally.
Break two eggs into small bowl & add about 1 tablespoon water. Add pepper, dried dill weed, old bay, etc. (a few shakes). Stir eggs with a fork until broken and mixed.

Turn the heat down to medium in the skillet. Add eggs and tilt pan to spread evenly.

Put two slices of bread into toaster and push down.

With spatula, lift edges of egg and let the liquid eggs run underneath to cook. Do this all around the edges of the pan.

Add tomatoes and cheese to the top of the egg. When cheese is melted and egg looks cooked (no runny liquid), fold over into an omelette.

When toast pops cut omelette in two or to fit the bread. Place on it and enjoy!

I spread the toast with cream cheese with chives or Helluva Good french onion dip before adding the omelette, but then I may have a death wish...
