Chili Seasoning:
1/4 c. flour
4 tsp. chipolte chili powder
1 tbsp. crushed red pepper
2 tsp. sugar
2 tsp. ground cumin
2 tsp. dried parsley
1 tsp. dried basil
1/4 tsp. black pepper
2 tbsp. smoked paprika
1 tsp. cayenne pepper

Chicken chili:
2 tbsp. extra virgin olive oil
1 small onion, diced
1-2 cloves of garlic
1 lb. Ground chicken (not ground chicken breast)
2 tbsp. above Chili Seasoning
1 can diced fire roasted tomatoes
1 can diced fire roasted green chilies
1 can white or red kidney beans, rinsed well

Directions:

In a large pot heat olive oil over medium low heat and add onions and garlic, cook until onions are softened and translucent. Remove from pan. Add chicken and brown in the residual olive oil. Return onion and garlic to pan. Add can of tomatoes, green chilies, beans and chilli seasoning to pot, mixing well to incorporate all ingredients. Add a 1/4 c. of water if needed mixture. Cover and boil over low heat for approximately 30 minutes to allow flavors to come together and some of the liquid to boil off and chili thickens.

Note: For spicier chili add more crushed red pepper, cayenne pepper or cumin.
