8 oz. pkg. herb seasoned stuffing
1/2 cup butter or margarine, melted
6 cups zucchini, unpared and shredded
1 small onion, finely chopped
1 cup carrots, shredded
1 cup sour cream
10.5 oz. can cream of chicken soup
1/2 cup shredded cheddar cheese

Directions:
Directions:
Combine the stuffing and melted butter; spread half in an 8x12-inch baking dish. Combine the zucchini, onion, carrots, sour cream and soup; spread over the stuffing. Top with remaining stuffing. Bake at 350º for 45 minutes. Sprinkle cheese over top of casserole the last few minutes of baking.
