Sponge:
1/2 cup warm water
1 pkg. yeast
3/4 cup flour

Dough:
3/4 cup warm water
2 tbsp. olive oil
1/2 tsp. salt
3 1/2 cups flour

pizza sauce
pizza toppings
mozzarella cheese
Parmesan cheese
Italian seasoning

Directions:
Directions:
Sponge: In a large mixing bowl, add yeast to warm water. Wait 5 minutes, then add flour; mix well. Cover the bowl with plastic wrap and set mixture aside for 1 hour in a warm place. Dough: Add all dough ingredients to sponge; mix well. Knead gently on a floured board until soft consistency. Put into a greased bowl, cover, and let rise for 1 1/2 hours. Turn the dough out onto a floured surface and form a ball. Put olive oil on the bottom of a jelly roll pan and spread dough out until it covers the whole pan. Put olive oil on top, then pizza sauce, cheese, seasonings and toppings of choice. Let rise for 30 to 40 minutes. Bake in a preheated 425º oven for 20 to 30 minutes until bottom is light brown.

Our Grandma Angela used to make this great pan pizza on Sundays. It was always such a special treat! We can still remember the incredible smell from the pizza baking as we were waiting impatiently for it to finish!
