8 oz. semi-sweet chocolate
1/4 tsp. peppermint extract
36 Ritz crackers

1. Melt chocolate in a double boiler. Add extract & stir well.
2. Dip crackers in chocolate, turning to completely coat.
3. Place crackers in single layer on waxed paper or parchment covered baking sheets.
4. Refrigerate 30 min. or until chocolate is firm.
