3 tbsp. butter or margarine
1 cup crushed chocolate wafer cookies (20 wafers)
1 qt. vanilla ice cream, softened
1 pt. peppermint ice cream, softened
1 pt. chocolate chip ice cream, softened
1 cup whipping cream, whipped (or whipped topping)
3 tbsp. powdered sugar
1 tsp. brandy extract or vanilla extract

Melt butter; add cookie crumbs and mix until blended. Reserve 1/4 cup; press remainder into bottom of 9 or 10-inch springform pan. Chill. Spread softened vanilla ice cream over crumbs; freeze until firm. Repeat with layers of peppermint and chocolate chip ice cream. Freeze. Remove sides of springform pan. Combine whipped cream with powdered sugar and extract; spread over top and sides of mold. Garnish with reserved wafer crumbs. Keep frozen until ready to serve. Cut into wedges, then serve.

My friend Rhonda grew up on a farm and they used to make this cake for every special occasion. It is a simple, easy dessert and everyone seems to love it. You can use your favorite ice cream flavors to come up with your own unique dessert!
