1 can kidney beans (rinsed)
1 cup chopped fresh tomatoes
1/2 cup chopped green peppers
1/4 cup chopped green onions
1-1.5 cups of corn chips approx.
Kraft Catalina Salad dressing
Directions:
Directions:
Chop up tomatoes,green onions, and green peppers
Drain and rinse kidney beans and place in bowl with veggies
Cover and refrigerate until ready to serve
Just prior to serving add corn chips and salad dressing and toss together
Use only enough salad dressing to coat or as desired
Not good for leftovers as chips get soggy , mix together only amount you wish to eat at one time. Recipe can be easily adjusted to larger or smaller # of servings by simply adding more or less ingredients.

This has become a potluck picnic staple. Even if you think you prefer a more traditional taco salad with meat and cheese you will likely be surprised that with this recipe you won't even miss it.
This recipe has been passed on several times upon request and always enjoyed , it was also my healthy crave when I was pregnant with Kendra.
