Ingredients:
Ingredients:
1 pkg. dry yeast
1/4 cup warm water
3/4 cup mashed potatoes
1 egg
1/3 cup sugar
1/2 cup flour
1/2 cup milk
1/2 tsp. salt
1 tbsp. melted butter
2 1/2 cups flour

Directions:
Directions:
In a small bowl, add yeast to warm water; set aside for 15 minutes. In a large bowl, beat the eggs, sugar, mashed potatoes, milk and 1/2 cup flour. Add the yeast mixture; beat well. It should be as thick as pancake batter. Cover the bowl with plastic wrap and let rise for 2 hours. Punch the dough down and mix in salt, butter and 2 1/2 cups flour. Cover and let rise for another 2 hours. Turn out onto a floured surface and roll dough to about 1 inch thick. Using a biscuit cutter or knife, cut the dough into biscuits. Place on parchment-lined cookie sheets, cover and let rise until doubled. Bake in a preheated 300 oven for 25 minutes or until very light brown.

Personal Notes:
Personal Notes:
Mom remembers her mother making these biscuits after the holidays to use up any leftover mashed potatoes. Since our family never had a lot of energy or leftover potatoes after the holidays, she would make them throughout the year using instant mashed potatoes instead. They were very delicious, so I guess it really did not make a difference...fresh or from the box!
