5 pounds boneless pork loin
1 tablespoon five-spice powder
1 tablespoon black pepper
for the glaze
2 ounces fresh ginger root peeled and grated
½ cup soy sauce
¼ cup hoisin sauce
¼ cup dry sherry
4 ounces sugar
¼ cup honey

Directions:

Season pork with five-spice powder and black pepper, roast pork in 350-degree oven until about
3/4 done, to about 120 degrees internal temperature. While pork is roasting, combine glaze
ingredients.
Pour glaze over pork, continue to roast, basting with glaze occasionally, until glaze caramelizes
and pork is cooked through, 155 degrees internal temperature for 15 seconds.
If pork is browning too fast after you apply the glaze, cover loosely with aluminum foil for the last
part of cooking time.
If the glaze is not browning enough, turn up oven to 450 for a few minutes until the roast is the
desired color.
