"As I ate the oysters with their strong taste of the sea and their faint metallic taste that the cold white wine washed away, leaving only the sea taste and the succulent texture, and as I drank their cold liquid from each shell and washed it down with the crisp taste of the wine, I lost the empty feeling and began to be happy, and to make plans."--Ernest Hemingway

to taste salt and pepper

½ cup honey
½ cup hoisin sauce
3 fluid ounces soy sauce
¼ cup vinegar rice or white
2 teaspoons five-spice powder or to taste

Directions:
Roast pork in 350-degree oven until about 3/4 done, to about 120 degrees internal temperature.
While pork is roasting, combine glaze ingredients.
Pour glaze over pork, continue to roast, basting with glaze occasionally, until glaze caramelizes
and pork is cooked through, 155 degrees internal temperature for 15 seconds.
If pork is browning too fast after you apply the glaze, cover loosely with aluminum foil for the last
part of cooking time.
If the glaze is not browning enough, turn up oven to 450 for a few minutes until roast is the desired
