10 pounds spareribs 3 racks, 3 1/2 pounds each
1 ½ cups rice wine vinegar or white vinegar
1 ½ cups soy sauce
1 ½ cups brown sugar
12 cloves garlic minced
For the glaze
2 cups pineapple juice divided
½ cup hoisin sauce

Directions:
Directions:
Combine vinegar, soy sauce, brown sugar, garlic and 1 cup of the pineapple juice, and pour over
the racks of ribs. Cover and refrigerate for 1 to 2 hours.
Remove ribs from marinade, discard marinade, bake ribs in a 325-degree oven until ribs are
nearly done (about 1 hour).
Combine reserved pineapple juice and hoisin sauce, brush glaze over ribs and continue cooking
(about 20 minutes) until ribs are done (155 degrees for 15 seconds) and tender. If ribs are getting
too dark, cover with foil for the last few minutes of the cooking time
