12 5 oz salmon fillets
2 teaspoons salt or to taste
for the sauce
¼ cup oil plus more for searing salmon
1 each onion minced
4 cloves garlic minced
1 tablespoon fresh ginger peeled and grated
¼ cup brown sugar
¾ cup soy sauce
¼ cup white wine
¼ cup lemon juice
½ teaspoon red pepper flakes or to taste

Make the sauce: Heat 1/4 cup oil and sauté onion 1 minute, add garlic and ginger, stir-fry until
fragrant, do not brown. Stir in remaining sauce ingredients, bring to simmer and keep hot (over
140 degrees) until needed.
Season salmon to taste with salt and place salmon fillets skin-side up in a hot pan with 1 - 2
tablespoons of oil. Cover; reduce heat to medium. Cook approximately 3 to 4 minutes, turn over
and continue cooking until done (145 degrees internal temperature for 15 seconds).
OR:
Season salmon to taste with salt and place salmon fillets skin-side down on a sheet pan, drizzle
with 1 - 2 tablespoons of oil. Roast in hot (400-degree) oven until done (145 degrees internal
temperature for 15 seconds).
Place salmon portions in serving pan, pour sauce over fillets.
