1/2 lb. butter, softened
2 cups sugar
2 tsp. vanilla extract
3 eggs
1 lb. ricotta cheese, drained
1 tsp. salt
4 cups flour
1 tsp. baking soda
powdered sugar
milk
food coloring and sprinkles (optional)

Directions:
Directions:
In a large bowl, cream butter, sugar and vanilla. Add in eggs, ricotta cheese and salt; mix well. Add flour and baking soda; stir well. Drop by rounded teaspoons onto parchment-lined cookie sheets. Bake in a preheated 375º oven for 10 minutes. Do not over bake. Cool. Frost with a frosting of powdered sugar and milk. I use a little red food coloring to make a pink frosting and sprinkle with colored shots.

I found this recipe in an old Italian cookbook from a second-hand store. I loved the taste, but felt they needed a little more pizazz. So I added the pink icing and colored shots. Perfection!
