Dough:
1 c. sifted flour
2 tsp. baking powder
1/4 tsp. salt
1/2 tbsp. sugar
About 1/4 c. shortening - a little less
1/3 c. milk - a little less.

Softened butter

Filling:
2 c. coarsely grated apples
1/4 c. brown sugar
1 tsp. cinnamon

Cinnamon sauce:
1 1/2 c. sugar
1 tsp. cinnamon
1/2 c. butter
3 tbsp. lemon juice
1 tbsp. lemon rind
1 c. hot water

Directions:
Prepare dough. Mix together filing ingredients (apples, cinnamon, sugar). Roll out dough into a rectangle. Spread with soft butter, then add filling ingredients. Roll up rectangle like a jelly roll or cinnamon roll; cut into 1 1/2 inch slices. Arrange in greased baking dish (about 9x9). Stir cinnamon sauce ingredients together in a saucepan and bring to a boil. Pour cinnamon sauce over arranged pinwheels cut side up.
Bake at 350º for about 40 minutes. Check after 30 minutes and turn down oven if getting too brown.
Make sure dough is cooked through at center.
