Apple Dumplings Recipe

2 c. sifted flour
4 tsp. baking powder
1/2 tsp. salt
1/3 c. shortening
2/3 c. milk

6 apples, peeled and cored

Filling:
1/4 c. packed brown sugar
1 tsp. cinnamon
1 tbsp. butter

Cinnamon sauce:
1 1/2 c. sugar plus
1 tsp. cinnamon
1/2 c. butter
3 tbsp. lemon juice
1 tbsp. lemon rind
1 c. hot water

Directions:
Directions:
For dough: Mix flour, baking powder, salt and sugar together. Cut in shortening with pastry blender until it resembles coarse meal. Stir in milk to make a soft dough. Roll out this enough to cut into 6 squares large enough to cover a whole apple or half of an apple in need to cut them.
For filling: Mix together filling ingredients.
Fill apple cores or sprinkle on apple halves. Dot each apple with butter and fold dough over apples.
Arrange apples (dumplings) in a greased baking dish deep enough to hold dumplings and sauce (about 3 cups).
For Cinnamon sauce: Stir all ingredients together in a saucepan and bring to a boil.
Pour sauce over dumplings and bake.
Bake at 350º about 40 minutes. Check after 30 minutes. Reduce heat if they are getting too brown.
