12 raisin bread slices
1 (8-oz.) pkg. cream cheese, softened
1 1/2 c. chopped cooked chicken breast
1/2 c. chopped pecans, toasted
1 to 2 Tbsp. mayonnaise
1/4 tsp. dried thyme
1/4 tsp. salt
1/4 tsp. pepper
1/2 c. mandarin orange segments

Directions:
Directions:
1. Preheat oven 400°F.
2. Cut crusts from bread slices. Cut bread slices into 4 triangles, and place on baking sheet. Bake for 5 minutes or until toasted.
3. Combine cream cheese and next 6 ingredients in a large bowl until blended. Cover and chill until ready to serve.
4. Spoon 1 tablespoon of cream cheese mixture onto 1 side of each raisin bread triangle; top each with a mandarin orange segment.

You can substitute any crackers for the toasted raisin bread and then skip steps 1 and 2. Delicious either way.
