2 cups flour
1/4 tsp baking powder
1/2 tsp salt
1/2 tsp baking soda
2 eggs
2 tsp vanilla
1 1/3 cup sugar
1 1/2 cup shredded zucchini
2/3 cup applesauce or oil

Directions:
Directions:
1. Preheat oven to 325 degrees.
2. Blend flour, baking powder, salt, and baking soda. Set aside.
3. Blend in a big bowl eggs, vanilla, sugar, zucchini, and applesauce or oil.
4. Slowly add dry ingredients to wet and mix.
5. Pour into an oiled loaf pan.
6. Bake for about an hour.

Optional: sprinkle brown sugar on top before baking
