1/3 c. butter
4 c. fresh bread crumbs (may toast bread & grind into crumbs in blender)
1 small head cauliflower
1 small onion
2 eggs, beaten
½ c. all purpose flour
½ tsp. salt
1 c. milk
2 c. cheddar cheese, grated

1. Preheat over to 350ºF.
2. Cook cauliflower and onion in lightly salted water until tender. Drain and coarsely mash to make approximately 2 cups.
3. While the vegetables are cooking, melt butter in large frying pan. Add crumbs. Cook and stir over medium heat until toasted a light golden brown colour. Pack ¾’s of the crumbs evenly over bottom and side of buttered 9” pie plate.
4. Smoothly combine eggs, flour and salt with a whisk; gradually stir in milk.
5. Add mashed cauliflower and cheese to milk mixture. Pour into prepared crust. Sprinkle remaining crumbs on top.
6. Bake 35 to 40 minutes or until set and lightly brown.
