2 lb. (4 cups) carrots, sliced
1 white onion, chopped
1 stalk of celery, sliced
1 green pepper, sliced
1 can tomato soup
½ c. sugar (or less)
½ c. olive oil
½ c. vinegar
1 tsp. each of salt & pepper

1. Cook carrots until tender. Don’t overcook.
2. Meanwhile, prepare onions, celery and pepper.
3. Drain carrots and rinse in cold water. Add to onions, celery & pepper. Combine.
4. Combine remaining ingredients in sauce pan and bring to boil.
5. Pour sauce over carrot mixture. Chill.
