Ingredients:  
4 cups cubed potatoes
1/4 cup chopped carrots
1/2 cup chopped onion
1/2 cup chopped celery
1/8 cup chopped parsley or 1 TBSP dried parsley
2 chicken bouillon cubes
3 cups water
1 dash salt and pepper
1 1/2 cup milk
2 TBSP wondra or flour
1/2 lb velveeta (1/4 of a 2 lb loaf)
1 package diced ham (if desired)

Directions:
Directions:
In pot combine: potatoes, carrots, celery, onion and parsley, chicken bouillon cubes, water and salt/pepper.
Cook until tender about 15-20 min.
Mash slightly.
Mix milk and flour and add to soup mixture.
Cube cheese and add it to soup.
Cook until melted.
Stir often so cheese doesn't stick to bottom.
Add diced ham if desired.
