Chicken Tortilla Soup Recipe

1 tsp olive oil
2 zucchini cubed
1 29 oz can crushed tomato
6 cups chicken broth
1 15 oz can chick peas or white hominy (I use chick peas)
1 1/2 tsp cumin
1/2 tsp cayenne pepper
1 Deli Rotisserie chicken meat pulled off and shredded
1 bunch cilanto
Avocado, tortilla chips, sour cream
Optional: squeeze of lime

Heat oil and saute zucchini for 2 min.
Add crushed tomato, chick broth, chick peas, cumin, cayenne pepper and chicken.
Heat to boil.
Simmer 15-20 min.
Stir in cilantro just before serving.
Garnish if desired.
