1 tablespoon Olive Oil
1 pkg (24 oz) White Mushrooms, washed, sliced
3 tablespoons Basting Oil (recipe in cookbook)
4 (about 6 oz each) Frozen Salmon Fillets, thawed
Salt and pepper to taste
1/2 cup roasted red peppers, thinly sliced
1 teaspoon dried thyme
1 teaspoon dried parsley
1 cup Teriyaki Sauce

Directions:
Directions:
Preheat oven to 350 degrees. Coat baking sheet with olive oil. Add mushrooms and basting oil to bowl; stir to combine. Arrange mushrooms in single layer on baking sheet.

Season fillets with salt and pepper; place on top of mushrooms. Arrange peppers around salmon; sprinkle fillets with thyme and parsley. Drizzle with sauce.

Bake, about 25 min, or until internal temp reaches 130 degrees (check by inserting thermometer halfway into thickest part of fillet). Let rest at least 2 min.
