Cafe Rio Sweet Pork and Rice Recipe

1 pork roast
16 oz. fresh salsa (I use bottled Pace and it's delicious!)
1 cup coke
2 cups sugar (I prefer brown sugar)

Creamy Cilantro Dressing:
3 fresh tomatillos, quartered (small green tomatoes)
1 package Ranch buttermilk dressing mix
1 cup mayo
1/2 cup buttermilk
1 cup fresh cilantro
2 cloves fresh garlic

Lime Rice:
1 cup dry rice
2 cups chicken broth
1 garlic clove
1 teaspoon lime zest
2 tablespoons lime juice

To cook pork, place in crock pot on high for about 6 hours with approximately 4 cups of water. Drain water and fat. Shred pork. Add remaining pork sauce ingredients and slow cook for about 2 more hours on low.

For dressing, place all ingredients in a blender and blend til smooth.

For lime rice, in rice cooker cook rice in chicken broth with garlic, lime zest, lime juice and salt. Add to black beans in a skillet. Add more lime juice and minced cilantro.
