1 tsp unsalted butter
2 tbsp olive oil
6 oz pancetta (or bacon)
2 large yellow onions (thinly sliced)
3 cloves chopped garlic
2 lbs all purpose potatoes cut into think slices
1 cup swiss cheese (or cheddar)
1 cups heavy cream
2 tbsp paprika
1 tbsp thyme
Salt and pepper

Directions:
1. Preheat the oven to 375 and butter a baking dish, set aside.
2. In a skillet heat olive oil over medium-high heat. Add pancetta (or bacon) and cook until golden (about 4 minutes). Add onions and season with salt and pepper. Cook until onions begin to caramelize (about 20 minutes). Lastly add garlic and thyme and cook for another 1-2 minutes.
3. Slice potatoes and layer in the bottom of the prepared dish, slightly overlapping the slices. Sprinkle with some of the paprika, salt & pepper, top with a layer of onions and cup of cheese. Continue layering until all potatoes and onions are used. Add the cream and remaining cheese and cover with foil.
4. Bake until all liquid has been absorbed, about 1 hour to 1 hour & 15 minutes. **make sure to put a baking sheet under the dish in case liquid spill over**
5. Remove foil and continue baking until golden brown, about 15-20 minutes.
6. Remove from oven and let sit for 10 minutes before serving.
