1 lb. boneless, skinless chicken breasts, cut in strips
1 15 oz. diced tomatoes with green chilies, drained
1 medium onion, cut in strips
1 medium green pepper, cut in strips
1 medium red pepper, cut in strips
2 T. canola oil
2 tsp. chili powder
2 tsp. ground cumin
1/4 tsp. salt
12 flour tortillas, warmed

Directions:
Directions:
In a greased cake pan, combine chicken, tomatoes, onions and peppers. Combine oil, chili powder, cumin and salt. Drizzle over chicken mixture, toss to coat. Bake, uncovered at 400 degrees for 20-25 minutes or until chicken is no longer pink and vegetables are tender. Spoon onto tortillas, fold in sides.
