Stuffing mix (I get two of the bags of mix from Albertsons)
6-7 stalks celery diced
1/2 to 3/4 sweet onion diced
1 stick butter
Garlic salt
Onion powder
Garlic powder
Ground or rubbed sage
Pepper
3-4 large boxes chicken or vegetable stock (I usually use vegetable, I think it's more flavorful)

Directions:
Directions:
Saute celery and onion in 1 stick of butter until onions are translucent. Add one box of chicken or vegetable stock. Simmer until celery is soft Put stuffing mix into large bowl, add the seasoning mix that comes with the croutons, and the onion/celery mixture. Add stock until croutons are moist but not soggy. Season with the rest of the ingredients to taste. Loosely stuff the cavities of the turkey and lace shut. Any remaining stuffing can be baked in a covered casserole dish. I like to add some more of the stock before baking so it stays moist, but again, not soggy.
