2 Tbsp. oil (blood orange)
1/4 cup finely chopped dried apricots (optional)
2 tablespoons finely chopped onion
1 garlic clove, diced
1 half sweet red pepper, diced
1 stalk celery, diced
12 to 15 uncooked jumbo shrimp, peeled and deveined
1 cup cubed fresh pineapple
1 tablespoon rice vinegar
1 tablespoon Dijon mustard
2 Tbsp. apricot preserves
dash of hot pepper

Directions:
In large skillet, heat oil. Saute fruit, onion, garlic, pepper and celery. Add shrimp and saute until barely done. Remove shrimp from pan. Add vinegar, mustard, preserves, and pepper. Stir until blended. Add pineapple until warm then add shrimp. Stir coat and serve.
