2 pounds tomatoes Local when in season,

½ teaspoon sugar
½ teaspoon salt
2 tablespoons olive oil blend
1 tablespoon red wine vinegar
2 tablespoons fresh mint leaves julienned
1 each red onion sliced thin, soaked in ice
water fro 30 minutes,
drained
1 teaspoon freshly ground black
pepper

Directions:

Cut the tomatoes into 1/4-inch-thick slices and arrange half the slices in one layer in a
shallow serving dish. Top with half the onion rings, half the mint, half the vinegar and half
the oil. Combine the sugar and the salt and sprinkle the layer of tomatoes with half the
mixture.
Arrange the remaining tomato slices on top and sprinkle them with the remaining salt and
sugar mixture. Drizzle the tomatoes with the remaining oil and vinegar, and let the salad
stand at room temperature for 30 minutes. Sprinkle the salad with the remaining mint and
onion slices. Grind some black pepper over the salad and serve.
