2 ounces olive oil blend, divided
12 each Roma tomato halved horizontally
1 loaf Italian Bread cut into 24 slices
for the dressing
½ cup red wine vinegar
2 cloves garlic minced fine
¾ cup olive oil blend
1 each red onion chopped
1 bunch fresh basil chopped
1 each green bell pepper diced fine
to taste salt and pepper

Directions:
Directions:
Brush ½ the oil over cut sides of tomatoes and season with salt and pepper. Roast (or grill
cut side down) tomatoes, until just cooked, but still slightly firm. Cool slightly.
Brush remaining oil over both sides of bread slices. Roast (or grill) until golden, about 2
minutes per side. Transfer to sheet with tomatoes. Cool slightly.
Make the dressing:
Whisk vinegar and garlic in medium bowl. Gradually whisk in remaining ¾-cup oil. Season
vinaigrette with salt and pepper to taste.
Cut grilled tomatoes in 1/2. Cut bread into 1/2-inch pieces. Combine tomatoes, bread,
onion and peppers in large bowl. Toss to blend. Let stand until bread absorbs most of
tomato juices, about 30 minutes. Add vinaigrette and basil, and toss to blend. Season
salad to taste with salt and pepper.
Serving Ideas: Try grilling tomatoes if char-broiler is available.
