2 each eggplant, whole approx 1 lb. each
to taste salt and pepper
2 ounces olive oil blend
6 ounces feta cheese
1 cup ricotta cheese
¼ cup fresh mint leaves chopped
3 each red bell pepper roasted and peeled
6 ounces spinach leaves Washed and dried
to taste salt and pepper

Cut eggplant lengthwise into 1/4-inch-thick slices and arrange 12 center slices on an oiled
baking sheet in one layer. Brush eggplant with oil and season with salt.
Roast eggplant until golden, about 5 minutes, turn eggplant and finish roasting, about 4
minutes more. Transfer eggplant to a platter and cool.
Mash together feta, ricotta, mint, and salt and pepper to taste. Cut peppers lengthwise into
pieces about same width as eggplant slices.
Top eggplant slices with pepper pieces, arranging them in one layer. Put 1-ounce cheese
mixture near narrow end of each slice and into it gently press 4 or 5 spinach leaves so
that they stick out on both sides. Beginning with cheese end, roll up each slice to enclose
cheese mixture and leaves.
Bake rolls until heated through (165 degrees internal).
NOTES: Serve with marinara sauce.
