4 pounds pork loin lean, boneless
for the jerk seasoning
1 cup fresh cilantro chopped
½ cup fresh ginger minced fine
¼ cup ground black pepper
2 tablespoons ground allspice
2 tablespoons brown sugar
6 cloves garlic minced fine
1 teaspoon cayenne pepper or to taste
1 teaspoon ground coriander
1 teaspoon ground nutmeg

Mix together Jerk Seasoning into a paste. Coat over the pork loin. Marinate, covered, in
the refrigerator, between 2 hours and overnight. Roast until the loin reaches 155 degrees
internal temperature.
Serving Ideas: Serve with a tropical fruit salsa.
