4 pounds pork loin, lean boneless
1 tablespoon black pepper
for the sauce
1 quart chicken broth
½ cup brown mustard
½ cup Dijon-style mustard
2 tablespoons prepared horseradish
2 tablespoons ketchup
2 tablespoons brown sugar
4 cloves garlic minced fine
for the garnish
1 each pineapple peeled and sliced into 6
slices
4 each carrot peeled
2 pounds potato red bliss "B" size
to taste salt and pepper
as needed vegetable oil

Directions:
Directions:
Season pork loin with pepper and put in 350 oven to roast.
While pork is cooking, combine chicken broth, brown and Dijon mustards, honey,
horseradish, ketchup, brown sugar and garlic in saucepan and simmer 10 - 15 minutes.
Brush sauce over meat during last 30-45 minutes of cooking time. Remove from oven
when done (over 155 degrees internal temperature).
Cut pineapple slices in half (to get 12 portions), cut carrots in 1/2" thick bias cut slices and
cut potatoes in half. Toss potatoes and carrots with enough oil to coat, season with salt
and pepper.
Roast vegetables and pineapple during last half of the cooking time and serve with the
meat.
