Mango Mojo
2 each mangos peeled and diced fine
3 ounces lime juice freshly squeezed
2 cloves garlic minced fine
1 each jalapeno chile pepper seeded and minced
1 each red onion diced fine
1 teaspoon salt or to taste
¼ cup fresh cilantro chopped
Fennel Rub
2 tablespoons fennel seeds whole
1 tablespoon black peppercorns whole
2 teaspoons salt
1 tablespoon sugar
1 tablespoon oil
8 5 oz pork center loin chops

Directions:

Make Mojo: Combine mango, lime juice, garlic, jalapeño, and cilantro, adjust seasoning
with salt.
Make rub: Grind fennel seeds and peppercorns in a food processor or crush together
using the bottom of a heavy pan. Combine with salt and sugar and stir in oil. Coat pork
chops with spice rub.
Grill (or roast) pork chops until done (155 degrees internal temperature.)
Serve pork with mojo.
Serving Ideas: The Cuban-style mango mojo could enhance any grilled meat, as could
the fennel-seed rub. Adding grilled asparagus, green beans or broccoli and herbed bulgur
or rice creates a well-rounded meal.
