12 5 ounces tilapia fillet or other firm white fish
2 ounces olive oil blend, divided
4 cloves garlic minced fine, divided
2 each onions diced fine
16 ounces mushroom sliced
8 each Roma tomato chopped
3 ounces black olives Kalamata if available,
pitted and chopped
3 tablespoons fresh oregano chopped
3 tablespoons fresh parsley chopped
2 ounces lemon juice Fresh
2 tablespoons capers drained

Directions:
Mix half the oil and half of minced garlic in small bowl. Brush garlic oil on both sides of
fish.
Sauté onions, mushrooms and remaining garlic in the remaining oil; about 5 minutes. Add
tomatoes, olives and herbs, cook 5 minutes to blend flavors. Season sauce with lemon
juice. Remove from heat. Cover and keep warm (over 140 degrees.)
Bake fish just until opaque in center, (145 degrees internal temperature). Top with sauce
and serve.
