12 5 oz salmon fillets
6 cups Napa cabbage julienned
20 ounces fresh spinach julienned
2 each red bell pepper julienned
2 each carrot julienned
for the dressing
½ cup rice wine vinegar
1 tablespoon oil
2 ounces soy sauce
1 tablespoon sesame oil
1 tablespoon fresh ginger root minced fine
2 cloves garlic minced fine
1 cup orange juice
2 ounces lime juice fresh
1 tablespoon sesame seeds toasted, see note

Make the dressing: Mix vinegar, oil, 1 ounce of the soy sauce, the sesame oil and reserve.
Combine vegetables and toss with enough vinaigrette to coat.
Heat skillet over medium-high heat. Add ginger and garlic, orange and lime juices and 1
ounce soy sauce; boil until mixture is reduced to 1/2 cup of glaze, about 3 minutes.
Remove from heat.
Spray salmon lightly with pan release. Cook salmon until done, (145 degrees internal
temperature for 15 seconds).
Drizzle glaze over salmon, sprinkle with sesame seeds and serve with some of the
vegetable mixture.
NOTES: Use other types of cabbage if Napa is not available.
Use half white and half black sesame seeds for upscale look.
