4 pounds flank steaks 2 large steaks
¼ cup soy sauce
¼ cup lime juice Or lemon juice
1 tablespoon cumin seed
1 teaspoon black pepper
3 pounds zucchini sliced 1/3" thick, on the
bias
3 each red onion sliced into 4 slices each
2 each lime sliced thinly
12 sprigs cilantro

Directions:
Directions:
Stir together soy sauce, lime juice, pepper and cumin in a bowl and add beef, tossing to
coat well. Marinate beef, covered, in refrigerator for 2 to 4 hours.
Remove beef from marinade, discard marinade.
Lightly spray onion slices and zucchini with pan release and roast in hot oven until done.
Roast (or grill) flank steaks to desired doneness (145 degrees internal temperature.)
Slice beef thinly against the grain and serve with 1 slice of onion and 1/3 of a zucchini.
Garnish with a slice of lime and a sprig of cilantro.
Serve over ½ cup of cooked rice.
