4 pounds turkey breast, R-T-C Plantation, see note
½ cup lime juice fresh
2 teaspoons black pepper or to taste
¼ cup fresh cilantro
½ bunch green onions chopped
2 cloves garlic minced fine
1 tablespoon vegetable oil
for the salsa
6 each Roma tomato seeded and diced
1 each red onion diced
½ cup fresh cilantro chopped
½ each jalapeno chile pepper or to taste, seeded and
minced
¼ cup lime juice fresh
1 teaspoon salt
1 teaspoon pepper

Directions:
Directions:
Combine lime juice, pepper, cilantro, green onions, garlic and oil and pour over turkey,
coating evenly. Cover and refrigerate for 3 hours, turning occasionally.
Combine tomatoes, onion, cilantro, jalapeno pepper and lime juice. Cover and chill.
Drain and discard marinade and roast turkey until done (165 degrees internal
temperature). Remove when done and cut into thin slices. Serve with salsa
NOTES: For recipe, use 1 Plantation R-T-C turkey breast, thawed in refrigerator and
removed from packaging, or raw turkey breast.
