16 oz. package elbow macaroni
4 TBS. butter or margarine
1 medium onion, chopped
1 TBS all purpose flour
1/4 tsp. dry mustard
1/4 tsp. pepper
3 c. milk
2 c. shredded Cheddar Cheese
2 c. shredded Swiss cheese
3 1/2 oz. package sliced pepperoni

Prepare macaroni as package directs. Place in a greased 4 qt. casserole dish. In 3 qt. saucepan cook onion in butter over medium heat until tender. Stir in flour, mustard, and pepper. Cook for 1 minute. Gradually stir in milk; cook, stirring constantly until sauce boils and thickens. Remove from heat and stir in cheese until melted. Preheat oven to 350. Reserve a few slices pepperoni for garnish. Stir the remaining pepperoni into the cheese mixture. Pour the mixture over the macaroni in the casserole dish. Mix to coat. Arrange the reserved pepperoni on top. Bake for 35 minutes or until hot and bubbly.
