For Cake:
2 c flour
2 c sugar
2 tsp salt
2 tsp baking soda
2 tsp cinnamon
1 1/2 c vegetable oil
4 eggs
4 c grated carrots
1 c walnuts or pecans, optional
1 c raisins, optional
1 1/2 c coconut, optional
For frosting:
7 T butter - softened
6 oz cream cheese
1 lb. powdered sugar
1 tsp vanilla
milk to thin mixture

Directions:
Directions:
Sift all dry ingredients together, add wet ingredients, fold in carrots and other optional ingredients. Bake 1 hour and 5 minutes in 325º oven.

Cream together all ingredients and use milk to thin to desired consistency. Spread on completely cooled cake.
