1 cup light or dark sun-maid raisins
1/2 cup brown sugar, packed
2 T flour
1/3 cup water
1/4 tsp. salt
2 T lemon juice
2 cup sifted flour
1 tsp. salt
1 tsp. soda
1 1/2 cup brown sugar, packed
1 egg
1 cup shortening
3 cup uncooked rolled oats
1/3 cup water
grated rind of 1 lemon

RAISIN MIXTURE: Combine raisins, 1/2 cup brown sugar, 2 T flour, water and 1/4 tsp. salt. Cook, stirring until thick. Stir in lemon juice. Cool.

COOKIE RECIPE: Sift together 2 cup flour, 1 tsp salt and soda. Stir in 1 1/2 cup brown sugar and 1 egg. Cut in shortening. Stir in uncooked rolled oats, 1/3 cup water, grated lemon rind, blending.

Form into balls (1 T dough each). Flatten. Dent center with thumb. Fill with raisin mixture. Bake at 375º for 10 minutes. Let stand 5 minutes. Cool on wire rack. Makes 3 1/2 dozen cookies.
