Ingredients: Chili Rub ¼ cup chili powder 1 tablespoon brown sugar ½ teaspoon cayenne pepper or to taste
Chicken 6 5 oz chicken breast no skin, no bone, R-T-C
Mop ½ cup barbecue sauce 1/3 cup ketchup ¼ cup orange juice 1 tablespoon soy sauce ½ teaspoon Tabasco sauce or to taste

Directions:For Chili Rub: Mix all ingredients. Rub on chicken and let marinate (covered in refrigerator) for at least 1 hour. For Mop: mix ingredients in medium bowl. Grill (or roast) marinated chicken until done (165 degrees internal temperature). Baste with "Mop" during last 5 minutes of cooking time. Serving Ideas: Can be served as a grill sandwich or an entree. Note: Left over cooked chicken (which has been chilled rapidly - in under 2 hours) can be cut up and used as a topping for pizza, in salads and sandwiches. |
