1 lb. breakfast sausage
2 c. shredded cheddar cheese
8 flour tortillas
6 eggs
1 T. flour
1/2 t. salt
pepper to taste

Directions:

350º oven, 13 x 9 pan
Brown sausage, do not have to cook completely, break into small pieces. Drain fat, if any, then stir in 1 c. shredded cheddar cheese. Spoon mixture down center of tortillas. Roll up, place seam side down in baking dish coated with nonstick spray. In a large bowl beat 6 eggs, 1 T. flour, 1/2 t. salt, and pepper. Pour over tortillas, bake immediately or refrigerate overnight. When ready to bake sprinkle 1 c. shredded cheddar cheese on top. Cover dish with foil, bake at 350º for 35 minutes. Uncover and bake 10 minutes longer or until eggs are set. Can eat with salsa on it.
