2 1/2 c. milk
4 slightly beaten eggs
1/2 c. sugar
1/4 tsp. salt
1/2 tsp. vanilla
1 9-in. pie shell, unbaked
Nutmeg ( optional )

Directions:
Directions:
Scald milk. Take a spoon to skim off the film on top of the scalded milk. Blend eggs, sugar, salt and vanilla. Gradually stir into milk. Pour into pie shell. I have found placing pie shell on a jelly roll pan is best, in case of spills and also aids in placing the pie into the oven easier. Sprinkle nutmeg on top ( optional ). Bake in 400º oven 20-25 minutes. Gently take out of the oven to cool. Must refrigerate . Just double the recipe if you want to make 2 at a time.
