MEATBALLS
4 bread slices
1/2 c. water
2 eggs
1 lb. ground beef
1/4 c. Parmesan cheese
2 T. parsley
1 tsp. salt
1/4 tsp. oregano
dash of pepper
SAUCE
3/4 c. chopped onion
1 clove garlic or 1/2 tsp. minced garlic
3 T. vegetable or olive oil
2 l lb cans (4 c. diced tomatoes)
2 6 oz. cans tomato paste
2 c. water
1 tsp. sugar
1 1/2 tsp. salt
1/2 tsp. pepper
1 1/2 tsp. crushed/dried oregano
1 bay leaf (remove before serving)
cayenne pepper to taste

MEATBALLS
1. Soak the bread slices in the water for 2-3 minutes
2. Add the eggs and mix well
3. Mix the above with the ground beef, Parmesan cheese, parsley, salt, oregano and pepper
4. Mix well and form into balls (walnut size)
5. Brown the meatballs in the vegetable or olive oil
6. Drain on paper towels.
SAUCE
1. Cook onion and garlic in oil until tender but not brown (Garlic burns easily, so watch closely)
2. Stir in well next 8 ingredients
3. Simmer uncovered for 30 minutes
4. Add meatballs and loosely cover and simmer another 30 minutes
5. Serve over hot spaghetti
6. Top with added Parmesan cheese
7. Serve with garlic bread

Paula notes that this is a favorite Halter family recipe and she along with her siblings requested this for supper on their birthdays.
Paula also notes that for a child's surprise, tuck a small square of mozzarella cheese inside the balls.
